From the Mont du Foret/Auvergne region, this creamy, cave-ripened cows milk cheese with blue veining and gray rind is a favorite of the Michelin Three Star Restaurant, Troisgros, in Roanne. Aside from its delicious flavor, its tall, cylindrical shape is exquisite on a cheese board. Great with salads, and a wonderful combination with fresh pears. Should be sliced in a circular fashion from the top down.
