Kendall Farms Crème Fraîche is heat stable and acid stable. It is an emulsion-fixing, stable white sauce. It has an amazing shelflife. It is ready when you are, waiting in the refrigerator. California crème fraîche, made from 40% butterfat cream, can be boiled and will NOT break. French crème fraîche, made from 30% butterfat cream, breaks when boiled. Kendall Farms Crème Fraîche is lower in fat and calories than butter and oil.
