In a manner recognizing its humble beginnings, this cheese is produced from cows milk, banded with a strip of bark and aged to develop an oozy, runny cheese. The inclusion of the strips of bark harken back to the beginning of this cheese when the climate and difficulties of living in high terrain made it difficult to deliver milk to other producers. To ensure that the milk did not go to waste, producers made small cheeses for their home that could be enjoyed all winter long.
