Perfect for so many thingsDec 09, 2010

A classic Pasta Amatriciana requires this beautiful and mild form of bacon, and as with every other product I have purchased from them, La Quercia has nailed Guanciale.
A little guanciale, rendered a bit but still tender, some diced tomatoes, a little peccorino romano, a pinch of crushed red pepper, and you are done. The guanciale is the star, and this guanciale really stands up. Served with bucatini pasta, and you might as well be in Rome.
