Description:

Balsamic vinegar is the unfermented juice, or "must" of the white trebbiano grape. The juice is boiled down to a sweet, intensely fruity syrup that is then aged is a series of barrels made from various woods including, chestnut, mulberry, juniper, oak and cherry. It is in this manner of aging that imparts the dark color and pungent sweetness to the vinegar. True balsamic vinegar is aged a minimum of six years and is traditionally made in Modena, a city in the Emilia-Romagna region of Italy. Manicardi's assortment of balsamic vinegars include many different quality levels, which are denoted by a number. The higher the number the better the quality. All Manicardi balsamic's are d.o.c. vinegars and are produced in their own facility in Modena. Manicardi Acetaia Vinegar #12 is aged in chestnut, cherry, mulberry, juniper, oak and acacia woods. This vinegar is great with grilled or roasted meat and on salads.

To be honest, for the price, this is very good Balsamic Vinegar. I know that the price is rather low for quality vinegar and I was a bit leery of that aspect being a firm believer in that you get what you pay for. In this case that old saying just did not apply. As inexpensive as this is, the quality is actually quite high.

I use quite a lot of this stuff in my cooking and a very large number of my salad dressings have this as an ingredient. It would take an extremely sophisticated taste to tell this product from the more expensive vinegars and for everyday cooking I find that this Manicardi #12 more than fits the bill. Frankly, I was rather amazed at what I got for my money here.

Like all Balsamic Vinegars, it takes a bit of experience to know where the cut off point is and where too much is too much...this product is no exception to that rule. A light hand at first is the best policy.

I highly recommend this. You get the taste you want, the essence, without having to sell off an expensive piece of jewelry each time you cook or whip a salad into being.

I purchased this as a gift for my wife for Mother's Day. She learned about it from a cooking class she took. We use is sparingly, but the taste is tremendous. It is better than any other balsamic vinegar I've ever had and I lived in Italy for 2 years. I highly recommend it if you want to spend this much on a product like this.

I thought this was a fabulous product for the price. Great in salads, great on meat and vegetables . Well worth buying for your own pantry and would make a good gift as well.

I ordered this from Amazon and it was fulfilled by Olio2go. The bottle that came wasn't the 12 year aged vinegar. It was some cheap substitute instead that was runny and no better than the balsamic I can get at a convenience store. I don't know if the item is simply incorrectly stocked or if Olio2go is truly trying to pass off this terrible imitation for the real stuff, but order with caution.
