Named after the freezing conditions in which the grapes are hand-picked and pressed, Minus 8 is traditionally slow fermented from extraordinary wine. A twist on traditional verjus, 8 Brix Red Verjus and 8 Brix White Verjus bring a burst of flavor with the sweet full flavors of grapes from the ice wine. 8 Brix Verjus is great in vinaigrettes and fantastic in cocktails. Use it in place of acidic ingredients such as vinegar, lemon juice or wine. Drizzle 8 Brix over finished seafood, meats, game, poultry or vegetables for a gourmet finish. Made from hand-picked premium fresh fruit, 8 Brix Verjus needs to be refrigerated after opening.
