Taza Chocolate takes great care in roasting the beans for their organic cocoa nibs. They start with single origin, organic cacao sourced directly from a grower-owned cooperative in the Dominican Republic. They roast the beans "low and slow" in small batches in order to preserve the bright and complex flavors of the beans. During the roasting process, they taste the beans frequently to monitor the progress. As soon as the beans are ready, they stop the roast and cool them quickly, locking in the flavor. Finally, the beans are carefully winnowed to remove the shell and the germ, and sorted by size. Taza Organic Roasted Nibs are toasty and rich, with a pleasant bitterness and intensely nutty flavor. Great on salads, in baked goods, or as a dessert topping. Use them in place of pinenuts or sunflower seeds for a clever and tasty surprise.
