A slightly acidic, not very sweet, liquid made from the juice of green grapes which never fully ripened enough for wine production. Verjus is used for deglazing, sauces and dressings, as an alternative to wine, vinegar and lemon juice when a milder flavor profile is desired. Not widely used since medieval times, Verjus is now enjoying a comeback in many dishes. This jar has grapes placed at the bottom and is a touch sweeter then the bottle with no grapes.
