Miso is a traditional Japanese seasoning produced by fermenting rice, barley and/or soybeans, with salt and the fungus k?jikin, the most typical miso being made with soy. The result is a thick paste used for sauces and spreads, pickling vegetables or meats, and mixing with dashi soup stock to serve as miso soup. High in protein and rich in vitamins and minerals, miso is still very widely used in Japan, both in traditional and modern cooking, and has been gaining world-wide interest. Miso is typically salty, but its flavor and aroma depend on various factors in the ingredients and fermentation process. White miso has a slightly milder, sweeter flavor than red miso.

this product must be refrigerated thus has to be overnighted which makes the shipping 3x the price of the product. however it will last in your refrigerator for a year.

The company discontinued this brand a while ago. So without bothering to check with me first, the fulfilling company shipped a different brand, one they later assured was recommended to them as being similar. But what I got was dark red even though it was labeled as white miso, and had a stronger flavor. It's true, the Nagano White Paste Miso, which I originally tried when I used to live near an Asian grocer, had a really nice mild flavor and a light color that would not color your food. Which is why I wanted to buy this brand specifically. But since it is discontinued, this review is a warning to buyers - if you are intent on buying Nagano white miso only, be sure to check with the shipper BEFORE they ship to get confirmation you will get that brand. I asked the company to take down their picture and change the name to the one they are now shipping instead since they acknowledge they will never be sending this brand again, but I see they ignored me and kept it up, out of total disregard for their customers. Bait and switch. I got my shipping back at least, which was $20!, but not the full refund as I didn't want to bother to send it back (at my own expense). You're likely not buying the item pictured, no matter who is shipping it, because they're not making it anymore. Check first if you care.

This miso paste is very tasty, although shipping is quite expensive. I put about 3 tablespoons of the miso paste into 4 cups of dashi stock and add scallions, tofu, and wakame. It's super easy and takes less than 10 minutes to make restaurant quality miso soup.

Just the right amount of flavor and saltiness.

Makes wonderful miso with perfectly suspended clouds throughout the soup.

Love love love everything I've made with this miso paste but my all-time favorite has to be the miso glazed salmon! I've used it as part of marinades, stir fry recipes for veggies, glazes. YUM!
