Hard cheese made from cowâ€™s milk. This cheese is D.O.P-protected and produced in the provinces of Vicenza, Trento, Padova, and Treviso. The cheese is straw-colored with occasional small eyes scattered widely throughout. By definition this cheese may be aged anywhere from 2-11 months; this one in particular is a â€˜mezzanoâ€™, aged for five to six months. The aroma is pleasant and slightly herbaceous and the flavor is sweet, with hints of apple and a texture that is light on the palate.
