After the kernels have hardened they are stone ground in the traditional process, then pre-cooked and packed to seal in the cornmeal’s natural freshness and flavor. This fine to medium corn meal is ready in only three minutes. Adjust the amount of water in the recipe to create a thicker or softer polenta.
