Founded by Chef Paul Bertolli in 2006, Fra' Mani sources their meats from family farmers commited to the responsible stewardship of their animals and their land. The animals are never given antibiotics, artifical growth hormones, growth promoting agents or meat by-products. All animals are fed 100% vegetarian diets and are raised on pasture or in deeply bedded pens with access to the outdoors. Fra’ Mani Sweet Apple Ham comprises three attached major muscles of the pork leg — inside round, outside round, and eye of round. Hand-trimmed, with a thin layer of flavorful cover fat. Fra' Mani Sweet Apple Ham has an appealing light pink complexion and is infused with the flavors of apple juice and brown sugar, two major components of the brine.Â
